Pheasant or Stripped Bass but a miss identified Black Angus Steer is also appreciated in a pinch.

Venison or almost anything else you can get in the frying pan.

I've had moose that was very good and some that was very bad.
Dall's sheep was tasty but tough.
No doubt Sitka Blacktail is the best venison compared to Mulie and White tail.
But my favorite of all is a nice fat doe Pronghorn, delicious meat.
Best fish is a three way tie between smoked King Salmon jerky (called squaw candy in AK Ling Cod and Walleye. Crappie filets get honorable mention.

Hands down, skillet fried cottontail rabbit w/ biscuits & gravy.

Fresh seasoned pork sausages.
Fried gator bites.

In my younger years (early 70's), I attended a "Wild Game Dinner" at the Original Noack Bar & Grill in Noack, Texas
A family of brothers (apparently wealthy!) would go hunting across Canada, Alaska, Mexico and the Continental U.S.!
In the spring, they would have this "dinner" and the whole countryside turned out!
I can't think of a game animal that wasn't "present"!
All the "ungulates" were present. Fried rattlesnake, fish, quail, dove, duck and everything in between!
I was able to attend two years in a row.
It's been sooooo long, I have NO idea just how many different "game" animals I've "tasted" nor how they tasted! Just remember everything was good!
