Science is fun and these things offer many opportunities to evaluate and draw conclusions from experiments depending on your level of science. A few possibilities for a relative novice:
Shotgun: Hypothesis: The further from the target, the better a full choke is for hunting quail. Measure compare the difference in chokes based on pellet density at various ranges.
Rifle: Hypothesis: a flat nosed bullet penetrates better and on a straighter line than a pointed bullet. Shoot various bullets of the same weight/caliber into a consistent medium like ballistic gelatin or layers of wet newspaper and measure the actual penetration.
Hypothesis: Pointed bullets drop less than round nosed bullets. Zero rifle at 100 yards and measure comparable drop at 200, 300, 400 yards. Plot bullet trajectories in a graph.
Fishing: Hypothesis: Lightweight line casts farther than heavy line due to less guide friction. Use different line weights in a spinning reel with a constant lure. Measure the distance and compare them. Plot results on a bar graph.

For rifles you could do bullet drop at distance and how grains, bullet weight, even gravity and humidity affect it. For shotguns I would go with grouping with different chokes. For fishing I would go how fishing differs with the seasons due to stratolayering.
