A lot of game butchers recommend hanging the meat. One local guy recommends 7 days in his cold storage before he butchers it. As far as getting it separated into steaks, jerky, hamburger, etc if you don't have anyone to teach you I would recommend just paying a butcher to do it. They're usually very affordable and will cut and wrap everything neatly. Worth the investment. Otherwise, you could check out the plethora of instructional videos on youtube. If you choose to go that route, make sure you have a real good knife, the means to sharpen it, and a few hours of free time.
