Does anyone save the heart and liver of a deer?

Never been a liver/heart fan.
I'll keep the occasional liver for catfish bait, but that's about it.
With the drouth we've been having, I found two year old catfish last week that haven't learned to swim yet!
There are more bird nests in the creeks than fish!
Nope...and I've eaten alot of fresh venison liver fried.

Liver and onions was always a tradition for supper the evening of opening day in my Fathers deer camp. Four or five men standing around the camp fire laughing, telling stories, and sipping bourbon and branch. Pack horses stomping in the background, the Milky Way crashing down from crystal clear sky's above. The best of times for a twelve year old....but I never liked the liver.

I will give the liver away to whomever wants it, and used to save it when I had a cat, though the last deer I shot was pretty young, so I did eat some.Years ago, old neighborhood Germans said that venison liver makes great liver dumpling soup, which is very good. The heart is just awesome. I'll gladly take every one I can get too. A good next day breakfast (a fav with our kids) is venison heart and the tenderloins lightly fried in butter with just salt and pepper. The heart is just a fist+ sized muscle. I cut away all the fat, arteries and valve and just slice it in round ,thin pieces. Another reason I love the double lung shot.

On a archery black bear hunt in Greenville, Maine my friend shot a bear.
The guide sliced up that fresh bear heart that same day then he put it on a large cast iron frying pan with olive oil.
He added sliced green peppers and onions.
When it was finished cooking he put it on a fresh round rolls.
It was fantastic!
