I have hunted in Central Texas in the Hill Country area. It's all private land, and the deer are very small, with a big buck weighing 100 pounds.
The deer season is also very warm.
South Texas is also hot, but the bucks are much bigger, esp. in the Chaparral area.

Yeah I know how hot it is I live 25 miles south of San Antonio.

Another thing I didn't like about hunting in the Texas Hill Country was the policy of the deer processing plants to butcher deer without a guarantee that the hunter would get his own deer back.

I bowhunted at Amistad NRA. Saw lots of signs and a few deer but they were too far to get a shot.
