I'm researching the best places for an African Safari trip I'd like to take this summer. I don't want a "take-my-hand" tourist adventure. Can anyone recommend how I can find info on real, old-fashioned safari?

You did not say whether you want to hunt plains game or dangerous game. By "old fashioned" do you mean a tented safari? I have hunted South Africa twice and can tell you the outfitters will hunt any way you are capable.
You also state that you want to go this summer which could prove problematic. I can not speak for all outfits but the one I hunted with is booked solid for 2009. If you have a flexible schedule you may be able to take advantage of a cancelation.
Feel free to e-mail me at [email protected] with more direct questions.

I know that most countries in Africa do not allow bowhunting incase you want to bowhunt(which i think is not the best idea because of all the big and dangerous game there). If your leaning toward being more of a scenic trip:http://www.africansafarico.com/
If you are wanting alot of hunting:http://www.tjsafari.com/packages.cfm

      -Hope I helped-

I hunted pains game for over a week with Johan from GNU safaris. He was full of information and great stories. He put us on game very consistently. He was very frank about the game we were considering. he would say that on is "huge" or a "gold medal winner". Other times, he would say that an animal wouldn't win any medals, but would be nice on the wall. He went out of his way to get great photos that accuratly represent the game and the terrain. he also worked the phone hard to find certain game we were looking for. When I go back,I'll hunt with Johan from Gnu Safaris. You can google them, they come right up.
