In theory, your 180gn bullet does have the velocity and energy. Shot placement of a strong construction bullet able to take down a mature elk is most important. A Nosler Partion or an Accubond, a Hornady Interbond or GMX, a Barnes TSX or TTSX, a Swift Scirocco II or A-Frame, or a Federal Trophy Copper will do the job.
