I have only fished for reds in the surf, but there I have used fresh cut bait. The oilier, the better. I like bonito or menhaden. You can also buy menhaden oil to apply/inject to other baits, but that is obviously not as good as the real thing. I have always used 12-15 lb mono with no problems.

Local bait shops usually sell whut works there. On the Florida panhandle. the setup is an egg sinker of about 1 oz, which slides about a foot and stops at a hook that is mebbe 3/4 of an inch from barb to shank. Small live crab, hooked through one of the shell points. The crabs bury, and the reds diggum up.

Bayouwoof, Redfish do love crabs and small blue crabs used to be an excellent bait. In years back, we would pull a small shrimp trawl "try" net to catch some bait shrimp and also save small croakers and small blue crabs. But alas, now you can not catch and keep a blue crab unless it is at least 4.5 inches from point to point across the shell. So sand fleas and fiddler crabs are currently the ultimate redfish and sheepshead bait. But I have caught redfish on everything from bass type spinner baits to catawba worms. If a redfish is finning in very shallow water, it will hit absolutely anything put in front of its nose including a bare hook with a piece of "tee" shirt on it, (something that I have done). But reds can also be a challenge to catch in deeper waters.
Just some of the bait I have used over the years:
#1- Lead head jigs with buck tail or pork rind or soft plastic tails.
#2- Feather dusters on a double speck rig.
#3- Live bait such as shrimp, croakers, baby mullet, elwys, pinfish, and crabs.
#4- Cut baits such as croaker, mullet, or my all time favorite - strips of fresh bloody hardhead catfish fillets.
#5- MirrOLures, Rapalas, Rebels, Heddon Spooks, even some of Jim Bagleys and Cotton Cordell's lures, Vintage Bingo Lures such as the Pluggin' Shortie, and Vintage Bomber Jerk Baits just to name a few.
#6- And finally a whole hand full of homemade lures.
