Alaskan Lake Trout is the tastiest Salmonid IMO. Chinook or King Salmon will give you one heck of a fight but I will go with Silver Salmon on lite tackle 'cause they jump more.
In fresh water love to catch a big Fla Largemouth and eat Walleye, Crappie (Speckled Perch in Central Fla) and Channel cats all fileted and in that order.
One other thing Arctic Grayling are very tasty too kind of like eating a Crappie (not like a trout at all).
